There is a lot to say about matcha, and how much misinformation / miscommunication there is in overseas markets with beautiful marketing & jargon but actually using low grade products (often not even Japanese). We will make a video on matcha during this summer to give you useful information about it. This time we are going to share a recipe for summer: our cold Matcha au Lait (lait means milk in French), which is also good for vegans and using good quality matcha. We hope you enjoy this video. Another popular tea yet pretty much unknown even in Japan. Hirabancha is a steamed tea made from the lower leaves harvested just after winter. The leaves are flat and dry, most of them are preserved in their original form. Expect a wonderful green tea old style and it is also wonderful in cold brew.
